Apple Chutney

George asked for our recipe for apple chutney. These are the ingredients Anthea normally uses: -
3lbs peeled, cored and finely chopped apples; 1 lb finely sliced onions; 1 ½ lbs sugar; ¼ lb crystallized ginger; ¼ teaspoonful of cayenne pepper; 2 cloves garlic; I desert spoonful od salt ½ pint vinegar; allspice.

Over many years experience she doesn’t weigh things, does it more and more by eye and throws in all sorts of things like sultanas, cloves as the fancy takes her. She sometimes uses small pieces of root ginger rather than the crystallized sort and sometimes omits the garlic. The results vary from year to year but are always nice.

Yes, Mary picked up on that when I read out the main part of the recipe, but she had thought about raisins.
I'm looking forward to tasting it!

Utterly ruined by adding that appalling muck..............garlic. Yuck to the nth degree.
Just had some Apple Chutney from 2010. Very nice too.

No, the recipe says garlic, Eric, but we usually miss that out

Anthea's recipe sounds delicious  8)

Recipes are just guidelines anyway.  If you don't like a particular ingredient, then leave it out and add something else.

Everyone's taste is different so adapt and enjoy  ;)
